These tacos are a delicious healthy take to the family favorite taco night. I used Conifer Coral which is a species of mushroom in the Hericium family (same as lion’s mane), so you are getting the added benefits of the brain boosting compounds such as hericenones and erinacines.
Ingredients:
1 lb. of Conifer Coral mushrooms
1 medium onion
tbs. butter or oil
Shredded mexican cheese
Sour cream
Black beans
Mixed greens
Almond tortillas
1 tbs. worcestershire sauce
1 tbs. taco seasoning
Start by cutting up the onion into long meaty slices, and sauté them in butter or oil until translucent. Add the fresh mushrooms to the onions and continue to sauté with onions until most of the water has evaporated off. Add the worcestershire sauce and taco seasoning and continue to sauté until the moisture evaporates. Remove from heat.
Using a separate pan, heat up tortillas and melt cheese onto them until the bottoms are golden brown.
Assemble the tacos by layering on the mushrooms, hot black beans, and other garnishes. I like to create a self-serve assembly line (you are going to want seconds).
