This is a highly versatile mushroom product that you can store in your fridge and use to add rich earthy mushroom flavor to all your favorite dishes. Great in pasta or soup! Also, this is a great way to sneak oyster mushrooms into your family's diet for those that don't like mushrooms due to their texture, plus oyster mushrooms contain lovastatin which is a compound connected to heart health.
Ingredients:
1 cup yellow onion chopped
1/2 cup shallots chopped
2 lbs. fresh oyster mushroom chopped
1 tsp fresh thyme leaves
3 tbs. butter
1 tbs. ground lions mane mushroom
1 tbs. ground oyster mushroom
1/4 cup white wine
salt and pepper to taste
Using a stainless steel pan sauté onions, shallots, and thyme until translucent. Add fresh mushrooms and cook on medium high until mushrooms have evaporated off most of their water. Add ground dried mushrooms and stir vigorously until bottom of pan begins to brown. Deglaze pan with white wine (this adds extra flavor). Place in refrigerator until cool.
Using a food processor blend ingredients together, add white wine if needed if ingredients are too dry to blend. Add salt and pepper to processor until the taste is right.
Serve on crackers with a dollop of crème fraiche and thinly sliced shallots coated with apple cider vinegar.
